We’re the Parsons family — a mom, a dad, and a little girl named Penelope who changed everything.
Penelope’s Bread Co. began over five years ago, during the earliest days of our infertility journey. Emily started researching ways to support our health, and discovered the benefits of long-fermented sourdough as a nourishing, healthy carb option. Baking became her refuge — a quiet ritual of hope, healing, and creativity.
What started as one loaf at a time slowly grew into something bigger: a small, heartfelt micro-bakery built on patience, tradition, and the belief that good things take time to rise.
Today, every loaf is handcrafted in our Sturbridge kitchen while Penelope plays nearby, naps, or “supervises” from her high chair. We’re honored to share our bread — and our story — with you.
What started as a deeply personal journey to nourish our health became a dream we now get to share with our community. Every order means the world to us, and helps build a future where Penelope grows up watching her parents create something real.
